I absolutely love avocados, spinach, cheese.. well.. everything in this grilled cheese! It surpassed my expectations. For something so simple it was packed full of healthy crunch. I also incorporated my new found love of fresh dill, combined with cucumber chips, black olives and a squeeze of lemon juice. There was no need for the dipping sauce at all.. I’ll be making this one again.
Sourdough Bread (or your choice)
Avocados, Tomatoes, Fresh Spinach
Butter one side of each slice of bread, place in hot pan, put a slice of cheese and the fixing on top.. Flip together when bread begins to brown. Serve immediately!
